Phytosterols, also known as phytosterols, belong to plant steroidal compounds. The main components of phytosterols include sitosterol, campesterol, stigmasterol, rapeseed sterol and corresponding alkanols, all of which have cyclopentane perhydrophenanthrene as the main frame structure and contain alcohol groups. The structural difference between them and cholesterol is that they have some side chains on C24, such as sitosterol with an ethyl group on C24, campesterol with a methyl group on C24, and stigmasterol has the same structure as sitosterol, except that C22 is a double bond. Plant foods with high phytosterols include vegetable oils, nut seeds, beans, etc. The phytosterol content in vegetable oil was the highest in corn germ oil, followed by sesame oil; pistachio content was the highest in nut seeds, followed by black sesame; soybean content was the highest in beans, followed by green beans; phytosterol content in vegetables, fruits and potatoes was relatively low.
