Phytosterol esters are generally prepared from phytosterols and fatty acids by esterification or transesterification. Because there are many kinds of sterols and fatty acids that can be used to produce phytosterol esters, many kinds of phytosterol esters with different physical and chemical properties can be obtained. The three main phytosterol esters are β-sitosterol ester, stigmasterol ester and campesterol ester. Sterol esters can be converted into sterols and fatty acids in human body, so their physiological functions include the physiological functions of phytosterols and fatty acids, and have the same effect of reducing plasma total cholesterol and low density lipoprotein cholesterol as free phytosterols, or even better in some aspects. It can be widely used in vegetable oil, edible oil (dry, wet), baked products, sausage, fruit juice, spread sauce, salad seasoning, dairy products (dry, wet), medicine, health food, functional cosmetics and advanced animal feed fields.
